- Chicken – We’re using cooked leftover Rotisserie chicken. But it can be leftover chicken breasts or thigh meat too #soeasy
- Veggies – use cooked drained corn and black beans. These can be leftover or store bought.
- Spices – these get their flavor from chili, paprika, garlic and cumin. Feel free to use some taco seasoning instead.
- Egg roll wrappers – use egg roll wrappers, not wonton wrappers.
- Cheese – use your favourite Mexican cheese.
- Egg – use to beaten egg to bring it all together.
Ingredients for Tex Mex Ranch
- Sour cream – you can use full fat or half fat sour cream
- Milk – Use either whole milk or 2% milk to cut calories.
- Ranch seasoning powder – add more or less ranch seasoning to taste.
- Citrus – this uses lime juice but you can use lemon juice too.
- Green onion – use both part adds color and crunch
How To Fry Southwest Egg Rolls
- Heat oil in a deep skillet, frying pan or deep-fat fryer to over medium high heat to about 350 degrees F.
- Add the egg rolls in batches and fry to 4-6 minutes or until golden brown.
- Make sure to turn them once during during frying.
- Drain on paper towels and repeat with remaining egg rolls.
How To Make Air Fryer Egg Rolls

- Preheat the Air Fryer to 375F and lightly grease the tray.
- Mix together, chicken, cheese, beans, corn, chili powder, garlic powder, cumin, and paprika.
- Split the mixture between the egg roll wrappers. Brush the edges of the egg roll wrappers with the bean egg and roll them like a burrito.
- Brush the outsides of the rolls with the egg wash and place in a single layer in the Air Fryer basket. Make sure there is space between them.
- Cook them for 9-10 minutes, making sure to turn them halfway through cooking.
- Make the Tex Mex Ranch dipping sauce by combining all ingredients.
- Serve the egg rolls with the dip.
Air fryer temperatures can vary depending on the make and model. I recommend starting with less cook time, checking for doneness, then adding more time as needed.
How To Bake Southwest Egg Rolls

- Preheat the oven to 400F / 20C.
- Add parchment paper to a baking sheet and brush with oil.
- Put the egg rolls on the sheet making sure to place them seam side down.
- Spray them with olive oil or a non stick cooking spray.
- Bake these for 15-18 minutes or until they are a golden brown in color, flipping at least once during cooking .
- Serve with the Tex Mex Ranch dipping sauce or soy sauce and enjoy!
How To Wrap Egg Rolls
- Spread your egg roll wrapper out flat, with one corner pointed toward you.
- Place approximately 2-3 tablespoons of southwest filling just below the center of the egg roll wrapper.
- Fold two opposite corners together to make a triangle, then fold the sides in and roll tightly.
- Seal the edges with egg wash or water.
- Repeat until all the egg rolls are done.
- Brush or spray oil onto each one.
Tips For Success
- Don’t overfill the egg rolls otherwise they won’t close properly.
- Make sure to seal them properly and cook with the seam side down.
- If you want them super crispy then spray them with oil before cooking.
- Make sure to keep the egg roll wrappers covered with a damp cloth so they do not dry out during preparation.
- Place them in a single layer in the Air Fryer with space between them for the air to circulate around each one so they cook perfectly.
- Please remember to flip the egg rolls halfway through the cooking time so they cook evenly.
