Easy Mexican Deviled Eggs

These Mexican Deviled Eggs are a tasty take on a classic. They are easy to whip up and ideal as party appetizers, protein-packed snacks, Game Day, or holiday side dish.

Suitable for gluten free, low carb and keto diets. Post includes Weight Watchers points.

These Mexican Deviled Eggs are a quick and easy appetizer that everybody will love. Plus they are a great way to use up all those leftover Easter hunt eggs or dyed hard-boiled eggs. #nofoodwastehere

These really are quite simple to make. And you only need a few everyday ingredients to whip up these Mexican-style deviled eggs. And if you want to kick up the heat level, add in a pinch of cayenne, red pepper flakes, or a dash of hot sauce and you are good to go.

What are Deviled Eggs?

Originating in the 19th century, the term ‘deviled’ was used to refer to spiced or zesty foods, such as eggs, mixed with mustard, pepper, and other spiced ingredients mixed and then added back into the cavity of where the yolk was.

Across the U.S., deviled eggs are also called stuffed eggs, Russian eggs, dressed eggs, or salad eggs. And ‘angel eggs’ is the term used when deviled eggs are made healthier, with less calories and fat.

  • Dairy – Mayonnaise and sour cream to add flavor and creaminess to the deviled eggs. 
  • Spices – Smoked paprika, garlic powder, and mustard add flavor and a bit of spiciness.
  • Vinegar – Cuts through the creamy flavor a bit.

How To Make Deviled Eggs

  1. Cook eggs in boiling water for 10-11 minutes, then immediately transfer them into some ice cold water to stop cooking.
  2. Once cooled, peel the eggs and slice them in half lengthwise.
  3. Scoop out the yolks, add them to a mixing bowl and combine with mayonnaise, sour cream, paprika, garlic powder, mustard and vinegar.
  4. Pipe or spoon the spiced filling mixture back into the cavity of the eggs.
  5. Garnish with chopped cilantro, a sprinkle of chili powder, and then serve.

Tips For Success

  • You need hard-boiled eggs with a firm yolk for this recipe. So try and cook them for about 10-11 minutes.
  • To cool them fast do it in some iced water, but if you have time then just let them cool down naturally.
  • Feel free to buy pre-cooked eggs to save time.
  • To make the eggs look pretty you can pipe the filling on.
  • If you don’t want to pipe the eggs you can just use a spoon to add the filling back in.

These spicy Deviled Eggs are delicious because of their simplicity, but you might want to take it to the next level…

  • Add heat – feel free to add in some diced jalapeño, chipotle, cayenne or red pepper flakes for a bit of heat.
  • Add fresh herbs – a sprinkle of your favorite chopped fresh herbs will make a huge difference.
  • Add meat – diced bacon or buffalo chicken would make a great addition.

Budget-Friendly Tips 

  • Buy eggs when on sale – buy them on sale and serve deviled eggs then. 
  • Use up leftover eggs – use up those leftover eggs from Easter egg hunts and dyed eggs.
  • Keep it simple – just mix in some mayo and mustard and you got some classic Deviled Eggs there.
  • Make deviled egg salad – if you have leftover deviled eggs, just mash them up and turn them into egg salad or an egg salad sandwich!

Make Ahead and Storage

This Mexican Deviled Eggs recipe is perfect for prepping ahead.

  • Prep Ahead – Boil the eggs a day in advance and keep them in the refrigerator.  Also, you can prepare the filling up to a day in advance, keep it in an airtight container, and pipe just before serving.
  • Store – Store leftovers in the fridge for up to 2 days. Note they will not look as beautiful as they do on the day you make them.
  • Freeze – Freezing this recipe is not recommended.

Ingredients

  • 10 eggs
  • ¼ cup (57g) mayonnaise
  • ¼ cup (61g) sour cream
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 tablespoon mustard
  • 1 teaspoon vinegar
  • chopped cilantro and chili powder for garnish

Instructions

  • Cook the eggs in boiling water for 10-11 minutes, then remove and place in and ice bath to stop the cooking.
  • When cool, peel the eggs and cut them in half lengthwise.
  • Scoop out the yolks and transfer to a mixing bowl. Combine with mayonnaise, sour cream, paprika, garlic powder, mustard and vinegar.
