These colorful Mexican Paletas are always a big hit. They can be made in advance, look great being served to guests at a party, and make the perfect anytime snack on a hot summer day. Especially since you only need 4 everyday ingredients and 5 minutes of prep time to make them

These homemade popsicles are really one of the easiest desserts to make. So easy even the kiddoes can make them unsupervised. They add an amazing pop of color at any occasion. Serve them along with some Easy Churros and Fruity Agua Fresca you and are good to go.

You can easily whip them up for Cinco De Mayo, summertime gatherings, Game Day, BBQs, backyard and pool parties, and kids’ parties when you want to pull out something spectacular.

What Are Mexican Paletas?

Paletas are a frozen Mexican dessert in which fresh fruit is pureed along with lime, sugar, and water (and sometimes cream, herbs, and nuts). No artificial flavors or colorings to be found.

Ingredient Notes

  • Fruit – This recipe uses fresh strawberry, watermelon, mango, and cucumber/kiwi. You can test other fruit to your liking.
  • Sugar – this recipe calls for plain white sugar. If your fruit are very sweet you can reduce or omit the sugar.
  • Water – The amount of water depends on your fruit. Watermelon for example requires less water.
  • Lime juice – Cuts through the sweetness of the fruit. So add to suit your taste. You can also use lemon juice instead.

How To Make Mexican Paletas

  1. Chop your fruit and add to a blender with the water, sugar and lime juice.
  2. Blend until smooth (if you want some fruit chunk you can just pulse it a couple of times)
  3. Pour into molds and insert sticks and freeze overnight.

Tips For Success

  • For the watermelon, you don’t have to add the water. Since watermelon has a high water content, you can use an extra 2 cups of fruit instead.
  • For the cucumber and kiwi, you can go 50/50 or 75/25, depending on which you want to be the dominant flavor.
  • Silicone molds are the best, as the popsicles can be removed easier.

  • Prep Ahead – This is a great dessert to prep ahead. They need at least 6 hours to freeze, so a tip is to set them up overnight.
  • Storage – You can store these popsicles for up to 3 months.

Freeze time normally depends on the ingredients. You need at least 6 hours but to be safe your best bet is to freeze overnight.

Ingredients

  • 4 cups (500g) chopped fruit such as Strawberry, Watermelon, Mango, Cucumber and Kiwi
  • 2 tablespoons sugar
  • ¾ cup (177ml) water up to 1 cup, depending
  • 2 tablespoons lime juice up to 4 tablespoons, depending to your taste

Instructions

  • Chop fruit and add to a blender along with the water, sugar and lime juice.
  • Blend until smooth (if you want some chunks in your ice pops, just pulse a couple of times).
  • Pour into silicone popsicle molds, insert sticks, and freeze overnight.
