Ingredient Notes

  • Baby Potatoes – But you can use bigger potatoes that you cut to size.
  • Vegetable Broth – You can use chicken broth instead. 
  • Seasoning – This dish gets its delicious flavor from fresh garlic, Italian seasoning, paprika, and salt.
  • Butter and oil – Melt and cool your favorite butter and add in a little oil to keep it liquid. But feel free to use rapeseed oil, vegan butter, or even bacon fat instead.

How To Cook Instant Pot Baby Potatoes

  1. Mix the cooled butter, oil, garlic, Italian seasoning, paprika, and salt together in a small bowl.
  2. Wash the potatoes, place them in the Instant Pot insert, then pour the chicken stock over the potatoes and brush the seasoned butter over the potatoes.
  3. Close the lid, turn the valve to sealing position, and set to high pressure / manual pressure for 5 minutes.
  4. Once done perform a quick pressure release.
  5. Gently scoop out some of the cooking liquid and drizzle over the potatoes so they are coated in the mixture (but careful so they don’t break).
  6. Sprinkle with herbs, if desired, and serve.

These Instant Pot Small Potatoes are delicious as is, but here are a few tips and variations to try:

  • These potatoes are not peeled – just wash and cook – really eaaaaaaasy.
  • Toss the hot potatoes with ranch dressing or vinaigrette to make a hot potato salad.
  • Add heat – chipotle, jalapeno or cayenne can easily add heat.
  • Use different seasonings – Greek seasoning, Tuscan seasoning, creole seasoning, Herbs de Provence, oregano, rosemary, etc.
  • Add extra flavors – Add-in or top with Ranch seasoning, pesto, lemon zest, or buffalo chicken or bacon bits, grated cheddar cheese, or Parmesan.

Budget Friendly Tips

  • Feel free to scale up the recipe, but do make sure you don’t go past the pressure cooker fill line.
  • Use regular potatoes cut up that you already have on hand.

Storage And Meal Prep

  • Refrigerate – store cooled potatoes in an airtight container for up to 4 days.
  • Don’t Freeze – Potatoes don’t free well, so I don’t recommend freezing this.
  • Make an extra batch that you can use with other meals throughout the week.
  • This stores for 4 days, so you eat it on the day you cook it plus 4 more days.
  • Separate leftovers in single eat-sized portions, place in airtight meal prep containers and let cool completely with the lids off before sealing and storing.

How Long To Cook Red Potatoes In Instant Pot

This depends entirely on the size of your red potatoes. These baby potatoes take just 5 minutes, if larger they will need more time.

Most important thing is to quick release the pressure so that they don’t over cook.

How Do I Crisp Up The Potatoes?

If you want the potatoes crispy, you can broil them for a few minutes after cooking. Or saute them in some butter afterwards in the Instant Pot or on the stove top.

What Are Baby Potatoes?

These are smaller potatoes with thinner skin that cook much quicker than regular potatoes.

  • 2 pounds (900g) baby potatoes any color
  • ¾ cup (180ml) vegetable stock
  • 4 tablespoons melted butter
  • 1 tablespoon Olive Oil
  • 2 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 3 garlic cloves minced
  • salt to taste
