- Baby Potatoes – But you can use bigger potatoes that you cut to size.
- Vegetable Broth – You can use chicken broth instead.
- Seasoning – This dish gets its delicious flavor from fresh garlic, Italian seasoning, paprika, and salt.
- Butter and oil – Melt and cool your favorite butter and add in a little oil to keep it liquid. But feel free to use rapeseed oil, vegan butter, or even bacon fat instead.

- Mix the cooled butter, oil, garlic, Italian seasoning, paprika, and salt together in a small bowl.
- Wash the potatoes, place them in the Instant Pot insert, then pour the chicken stock over the potatoes and brush the seasoned butter over the potatoes.
- Close the lid, turn the valve to sealing position, and set to high pressure / manual pressure for 5 minutes.
- Once done perform a quick pressure release.
- Gently scoop out some of the cooking liquid and drizzle over the potatoes so they are coated in the mixture (but careful so they don’t break).

Most important thing is to quick release the pressure so that they don’t over cook.
If you want the potatoes crispy, you can broil them for a few minutes after cooking. Or saute them in some butter afterwards in the Instant Pot or on the stove top.
