GRILLED RED POTATOES IN A SERVING DISH
RED POTATOES IN A FOIL PACKET

These 4 ingredient Foil Pack Grilled Red Potatoes are a pantry staple, minimal prep side dish that can be made on the grill or oven. You can prep them ahead and cook easily on the campfire.

Suitable for vegan and gluten free diets. Weight Watchers points included.

The great thing about cooking potatoes on the grill is that they require minimal prep, are easy to put together, are very adaptable with flavors and cook in 25 minutes. Yeap, a little effort and 4 ingredients later and you can tuck right in.

Like my 5 ingredient Chicken Fajita Foil Packets, I have kept these Foil Packet Potatoes very simple and easy. But feel free to add other veggies and beans to bulk it out as you wish.

Cooking these is great for cookouts, camping, backyard parties, summer lunches, and dinners and cooking up in your oven when you are short on time but still want big flavors that both grown ups and kids would love.

Ingredient Notes

  • Red potatoes – You can use either whole potatoes cut into 4-6 pieces depending on size or baby potatoes halved.

Make In The Oven

  • Preheat the oven to 400F / 200C / gas 6.
  • If cooking in the oven, then cook for 20-25 minutes until the tender but cooked through.

Recipe Tips and Delicious Variations

  • Cut the potatoes to the same size so they cook at the same rate.
  • Cook for a bit longer if you want slightly more caramelised potatoes.
  • Add extra foil – Sometimes doubling the foil is a great way to keep in the steam and liquid the food cooks in.
  • Vary the spices – feel free to use taco seasoning or another seasoning to your taste.
  • Add heat – chili powder, cayenne, or chipotle are easy ways to add some heat.

Budget Friendly Notes

  • Double up – feel free to double or triple the recipe.
  • Make into a complete meal – add some leftover salsa, or left over meats for a complete meal.
  • Use any potatoes – use whichever potatoes you have.

Storage And Meal Prep

  • Refrigerate – let cool and store in an airtight container for up to 4 days.
  • Don’t Freeze – Because of the potatoes I don’t recommend freezing it.
  • Make an extra batch or two that you can use with other meals throughout the week.
  • This recipe stores for 4 days so you can eat it on the day you cook it plus 4 more days.
  • Separate leftovers in single eat-sized portions, place in airtight meal prep containers, and let cool completely with the lids off before sealing and storing.
  • To vary it up through the week serve it up with different treats like left over Rotisserie Chicken, chicken, fish, bulk out leftover soups and stews etc.
