Ingredients

  • 3 cups (675g) diced pineapple
  • ½ red onion finely diced
  • cup (6g) chopped cilantro
  • 2-3 tablespoons lime juice
  • 1 jalapeño pepper deseeded and diced
  • salt to taste
  • ½ teaspoon taco seasoning optionl

Instructions

  • Mix all the ingredients into a bowl.
  • Cover and let stand for 30 minutes before serving.

Tips For Success

  • If you don’t like a lot of heat, remove the seeds and the ribs from the jalapeno before dicing. 
  • Cut all your ingredients into similar-sized pieces, so it’s easy to get a bit of everything in each bite. The small you chop, the better.

Delicious Variations

  • Add Mango - Diced mango is a sweet and welcome addition to this salsa.
  • Add Roasted Red Peppers - Sweet and slightly smoky; roasted red peppers also add more color.
  • Add Avocado - Adding chopped avocado can add a creamy element to this salsa. If your pineapple is not very sweet, you may only need to add half of the lime juice.

  • Fresh Pineapple is Economical - The flavor of fresh pineapple is so incredible, and it’s often cheaper than the equivalent amount of canned pineapple.
