Preheat your oven to 400 degrees F / 204 degrees c. Put a wire baking rack on a rimmed baking sheet lined with foil.
Pat chicken wings dry with a paper towel, then add them to a large bowl along with the flour and cornstarch, mixing until well coated.
Gently shake the wings to remove any excess coating, then place on top of the baking rack in s single layer.
Bake for 20 minutes, then turn the chicken wings over and bake for another 15 minutes, until golden brown and the internal temperature has reached 165 degrees F / 74 degrees C.
While the chicken wings are baking, prepare the hot honey sauce by pouring honey into a small saucepan over medium heat, then whisking in the butter and hot sauce, until melted and thoroughly combined. Bring to a boil for 2-3 minutes, then remove the sauce from the heat.
Place the baked chicken wings in a large bowl, then pour the sauce over and toss until thoroughly coated.
Return the chicken wings to the wire rack and broil for 2-3 minutes or until they are browned and crispy. Watch closely, as they can burn quickly!
Serve immediately for the best flavor and maximum crispiness.
