Meatball Stuffed Pita Sandwiches

Ingredients

  • 10 cooked Italian meatballs
  • 20 small pitas
  • 2 small Roma tomatoes
  • 1 cucumber
  • Caesar salad dressing

Instructions

  • Slice the tomato and cucumber and set aside.
  • Cut the pitas to open them up.
  • Slice the meatballs in half.
  • Fill each pita with sliced tomato, cucumber, and a half of a meatball. Top with Caesar salad dressing.
  • When all of the pitas are assembled, serve and enjoy!

Notes

  • Vary the meatballs - you can use turkey meatballs or chicken meatballs instead.
  • Vary the veggies - bell peppers, lettuce, and shredded carrots make a great addition. For even more flavor, you can marinate the tomatoes and cucumber beforehand.
  • Vary the dressing - use Ranch dressing, Tzatziki, or Yum Yum sauce for a different flavor profile.
  • Stock up on meatballs and pita bread when on sale and freeze until needed.
  • Use vegetables you already have on hand.
  • Freeze a few cooked meatballs when cooking other meatball recipes so you can whip these up when needed.
  • Storage - Refrigerate cooked meatballs in an airtight container for up to 5 days or keep in the freezer for up to 2 months.
