Ingredients

  • 30 chicken wings cut into drumettes and wingettes
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons Italian seasoning
  • 1 teaspoon ground coriander
  • salt and pepper

Instructions

  • Oil and clean grill grates and preheat the grill to medium heat. Alternately, preheat a grill pan on the stovetop.
  • Pat the chicken wings dry with a paper towel.
  • In a large bowl, combine onion powder, garlic powder, smoked paprika, Italian seasoning, ground coriander, salt and pepper. Add the chicken wings and toss until well coated.
  • Place the chicken wings onto the grill and cook for about 20 minutes, turning them over every 5 minutes or so. Check for doneness with a meat thermometer and serve hot.

Notes

  • Clean grill grates well before oiling to prevent the chicken from sticking.
  • Preheat the grill so it’s nice and hot before you grill chicken wings.
  • Pat the chicken dry before coating it with the dry rub seasoning blend.
  • Combine the wings and seasoning in a small bowl and toss to distribute the seasoning evenly.
  • Grill the wings over direct heat.
  • Keep a spray bottle of water handy in case you have flare-ups in the grill.
  • Flip the chicken wings every 5 minutes or so to prevent burning.
  • For even cooking, keep the grill covered except when turning the grilled chicken wings.
  • Use this same chicken wing recipe for grilling chicken thighs.
  • Always check for doneness with an instant-read thermometer. The internal temperature should be 165 degrees F / 74 degrees C when inserted into the thickest part of the chicken.
  • Place chicken wings on a platter and serve the cooked wings hot.
  • Storage - keep leftovers in an airtight container inside the fridge for 3 days.
