Lemon Pepper Chicken Legs

Ingredients

  • 8 chicken drumsticks
  • ½ pound (226g) brussels sprouts stems removed
  • 2 tablespoons oil
  • 1 tablespoon lemon pepper seasoning

Instructions

  • Prepare the Brussels sprouts and place in the bottom of a deep baking dish.
  • Add the chicken drumsticks on top of the Brussel sprouts.
  • Drizzle with oil and then sprinkle with lemon pepper seasoning.
  • Bake at 400F / 200C for 30 minutes, or until the chicken has reached an internal temperature of 165F / 74C.
  • If desired, place under the broiler for a few minutes to brown and crisp the skin.

Notes

  • Look for drumsticks that are similar in size for even cooking. 
  • If your lemon pepper seasoning blend does not contain salt, you may want to season with a bit of salt. 
  • Always check for doneness with a meat thermometer. The temperature should be 165F / 74C when inserted into the thickest part of the chicken.
  • If desired, place the drumsticks under the broiler for a few minutes before serving to brown them and crisp the skin a bit.
  • Storage – keep leftovers in an airtight container inside the fridge for up to 4 days.
