  • 1 tablespoon Olive Oil
  • salt & black pepper to taste
  • 6 skin on bone in chicken thighs
  • 3 garlic cloves minced
  • ¾ cup (177ml) chicken broth
  • ½ cup (118ml) heavy cream
  • 1 tablespoon Italian seasoning
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • ½ cup (27g) chopped sundried tomatoes
  • ½ cup (45g) grated Parmesan
  • 2 tablespoons bacon bits
  • herbs for garnish

  • Preheat oven to 375F / 190 C / gas 5.
  • Season chicken with salt and pepper.
  • Heat oil in a skillet and brown chicken thighs for 3-4 minutes per side. Then remove chicken from the skillet and set aside.
  • Remove excess fat from the skillet and add in the garlic and stir for 30 seconds till fragrant and add in the Italian seasoning, thyme, red peppers flakes, sun dried tomatoes and bacon.
  • Mix in the broth, heavy cream and Parmesan and simmer for 5 minutes for the flavors to develop and the cream thickens.
  • Add in the chicken skin-side up and transfer the skillet into the preheated oven and bake for 18-20 minutes until the chicken cooks through (juices run clear).

  • Brown the chicken - while you can skip this step, browning the chicken adds a ton of extra flavor.
  • Add in wine - A little splash of white wine adds a ton of flavor to this Sicilian Chicken.
  • Lighten up - You can use half and half in place of the heavy cream. This will lighten the recipe a bit.
  • Use chicken you have - If you already have breast use these instead. They may need to cook for a little less time.
  • Add in veggies - You could substitute some of the chicken with mushrooms (or just add extra mushrooms). You will need to add a little more liquid if you decide to include extra veggies.
  • Make it TWO meals -  Make a bit of extra sauce and serve the sauce over some pasta or rice.
  • Save the bones - Toss the bones in an airtight bag in the freezer. When you have a bag full, toss them in a pot with water and some veggie scraps (leftover raw onion, carrots, or celery) and make a flavorful chicken broth to use in soup or other recipes.
  • There are 15 WW Blue Plan SmartPoints in one serving of this.
  • If you use boneless skinless chicken breast, one serving will contain 6 WW Blue Plan SmartPoints.
