- 2 cups (320g) milk chocolate chips or dark chocolate chips
- 16 ounces 1 package (453g) saltine crackers
- 1 cup (180g) mini eggs cracked and crushed
- 2 cups (400g) brown sugar
- ¼ cup (92g) corn syrup
- ½ cup (113g) butter
Place crackers on a parchment-lined tray in a single layer.
Melt brown sugar, syrup and butter and bring to a simmer. Bring to 300F / 149C degrees, then remove from heat, pour on top of the crackers, and spread it out evenly.
Allow it to set up for 10 minutes, then melt chocolate chips and spread evenly over the caramel.
Place in the fridge for at least 1 hour, then remove and cut into serving-size pieces.
