Kale Baked Feta Pasta

Ingredients

  • 4 tablespoon olive oil
  • 8 ounces (225g) feta cheese
  • 1 ½ cups (300g) cherry tomatoes
  • salt and pepper to taste
  • 8 ounces (225g) pasta
  • 1 cup (67g) kale chopped

Instant Pot Baked Feta Pasta

  • 2 ½ cups (591ml) stock vegetable or chicken
  • 8 ounces (225g) pasta
  • 8 oz (225g) feta cheese
  • 1 ½ cups (300g) cherry tomatoes
  • 1 ½ teaspoons Italian seasoning
  • salt and pepper to taste

Instructions

To Make Oven Baked Feta Pasta

  • Preheat the oven to 400F / 200C / Gas 6. Pour half the olive oil in a baking dish. Add the feta cheese and the cherry tomatoes. Sprinkle with salt and pepper and take to the oven. Bake for 20 minutes.
  • Add the kale, drizzle with the remaining olive oil and bake for 10 more minutes.
  • While the kale is baking, prepare the pasta. Drain and reserve 1 cup cooking water for the sauce.
  • Remove the baking dish from the oven. Add the cooking pasta water and stir to combine everything together, the sauce should be creamy.
  • Add the cooked pasta and toss to coat.

To Make Dump and Start Instant Pot Baked Feta Pasta

  •  Add stock followed by pasta (make sure the pasta is submerged), tomatoes, feta nestled into the pasta and Italian seasoning.
  • Close the lid, turn the valve to sealing position, and set to high pressure / manual pressure for 4 minutes.
  • Once done perform a quick pressure release.
  • Mix everything together and let stand for 5 minutes before serving.

Notes

  • Use either block or crumbled feta. 
  • There is no need to cut or slice the tomatoes ahead of time.
  • Remove any woody stems from the kale.
  • Buy in Bulk - Bulk foods are often less expensive. Olive oil, pasta, and feta cheese can all be purchased in bulk.
  • Save Leftovers for Lunch - Eating leftovers for lunch is a great way to stretch this recipe. 
  • Buy Whole Kale - Fresh, whole kale is generally cheaper than kale that is already chopped and washed. Strip the leaves of the stems and chop.
