Ingredients

  • 12 ounces (348g) chicken breast 2 boneless and skinless breasts cut into bite-size cubes
  • 1 tablespoon olive oil
  • 2 tablespoons melted butter divided
  • ½ cup (156g) Franks Red Hot Sauce or other hot suace
  • Chopped parsley optional, for garnish
  • Ranch dressing optional

Instructions

Stove Top Instructions

  • Heat oil and 1 tablespoon of the butter in a skillet, then add in the cubed chicken.
  • Cook turning frequently until all sides are golden brown and the chicken is cooked through for about 8 minutes.
  • Pour in the remaining tablespoon of melted butter and add the Franks Red Hot sauce.
  • Toss well until all the chicken pieces are thoroughly coated with the sauce, then switch off the heat.
  • Garnish with chopped parsley, if desired, and serve with veggie sticks and Ranch dressing.

Air Fryer Instructions

  • Preheat the air fryer to 400 degrees F or 200 degrees C.
  • Add the cubed chicken to the air fryer basket or tray and cook for 10-12 minutes, or until the chicken is thoroughly cooked through.
  • While the chicken cooks, melt one tablespoon of butter and whisk in the hot sauce.
  • Remove cooked chicken from air fryer and toss it in the butter buffalo sauce mixture until all pieces are well coated.
  • Garnish with parsley and serve with a side of vegetables and Ranch dressing (if desired).

Notes

  • Chop chicken breast into similar-sized pieces for even cooking. 
  • For extra flavor, you can season the chicken before browning. 
  • Cook the chicken in batches if you have a smaller skillet or air fryer. 
  • If air frying, be sure you don’t layer the chicken bites or overfill the basket or tray.
  • Double the recipe for meal prep or to feed a crowd. 
  • Always check chicken for doneness with a meat thermometer. The internal temperature should be at least 165 degrees F or 74 degrees C before serving.
  • Storage - keep leftovers inside the fridge for up to 4 days.
