INGREDIENT NOTES

Taco Seasoning – This is optional but lends to that traditional salsa flavor.  Pineapple – You want to use fresh pineapple for this recipe. The flavor is much sweeter than canned pineapple. It’s not terrible with canned pineapple, but fresh is so flavorful. Lime Juice – Again, fresh is your friend, but bottled lime juice will work in a pinch.

TIPS FOR SUCCESS

If you don’t like a lot of heat, remove the seeds and the ribs from the jalapeno before dicing.   Cut all your ingredients into similar-sized pieces, so it’s easy to get a bit of everything in each bite. The small you chop, the better.

DELICIOUS VARIATIONS

Add Mango – Diced mango is a sweet and welcome addition to this salsa. Add Roasted Red Peppers – Sweet and slightly smoky; roasted red peppers also add more color.

BUDGET FRIENDLY TIPS

Fresh Pineapple is Economical – The flavor of fresh pineapple is so incredible, and it’s often cheaper than the equivalent amount of canned pineapple. Use Leftover Veggies/Pineapple – Make this with leftover pineapple and veggies from another recipe, so you get more bang for your buck.
