These homemade popsicles are really one of the easiest desserts to make. So easy even the kiddoes can make them unsupervised. They add an amazing pop of color at any occasion.

WHY MAKE THIS RECIPE

You only need four simple ingredients. They are refreshing and great for summer.   They help use up leftover fruit.

INGREDIENT NOTES

Fruit – This recipe uses fresh strawberry, watermelon, mango, and cucumber/kiwi. You can test other fruit to your liking.  Sugar – this recipe calls for plain white sugar. If your fruit are very sweet you can reduce or omit the sugar. Lime juice – Cuts through the sweetness of the fruit. So add to suit your taste. You can also use lemon juice instead.

TIPS FOR SUCCESS

For the watermelon, you don’t have to add the water. Since watermelon has a high water content, you can use an extra 2 cups of fruit instead.   For the cucumber and kiwi, you can go 50/50 or 75/25, depending on which you want to be the dominant flavor.

DELICIOUS VARIATIONS

Vary the fruits and vegetables – others you can use include avocado, peaches, pineapple, guanabana, blackberries, passion fruit and banana. Make it spicy – You can easily add in a bit of heat via some jalapenos.

STORAGE

Prep Ahead – This is a great dessert to prep ahead. They need at least 6 hours to freeze, so a tip is to set them up overnight. Storage – You can store these popsicles for up to 3 months.
