WHY MAKE THIS RECIPE

Frugal – Make it at home so you can avoid the restaurant mark-up.    Easy – This entire recipe is made in the Instant Pot, so it’s effortless.   Customizable – Add or subtract veggies to suit your preferences.

INGREDIENT NOTES

Jasmine Rice – Medium or long grain rice works best. Jasmine seems to hold up well without clumping or falling apart.   Chicken Breast – You can also use boneless, skinless chicken thighs.

TIPS FOR SUCCESS

Rinse and drain the rice to remove excess starch. This will prevent cooked rice from clumping together. Check for doneness with a thermometer. Chicken should always be cooked to an internal temperature of at least 165F / 74C. 

DELICIOUS VARIATIONS

Add More Veggies – Add broccoli, snow peas, water chestnuts, or any of your favorite veggies. Make it Spicy – Add a little chili oil, sriracha, or crushed red pepper for spicy fried rice.

BUDGET-FRIENDLY TIPS

Use fewer eggs –  Eggs are a delicious part of fried rice, but you could use two eggs if need be. Leave the Chicken Out –  This rice is tasty enough on its own that you won’t even miss the chicken.
