Cut chicken wings into wingettes and drumettes and pat dry with paper towels.

Place the raw chicken wings on a baking sheet lined with a paper towel to dry out in the fridge overnight. Cover the chicken wings and let them dry for a minimum of 1 hour if possible.

Line a rimmed baking pan with aluminum foil and top with an oven proof baking rack. Spray with non-stick cooking spray or brush with vegetable oil.
