Cook pasta according to the package directions until it is al dente. Drain the pasta, reserving 3 tablespoons of the cooking water.

Melt butter in a large saucepan over medium heat. Add zucchini and cook for about 6 minutes, until soft and starting to caramelize.

Stir in the garlic, Italian seasoning, onion powder, salt, and pepper, and cook for 30 seconds, until fragrant.

Add in the cherry tomatoes and sauté for 2 minutes. Next, add the pasta, reserved cooking liquid, and parmesan cheese, stirring constantly for another 2 minutes.
