HOW TO MAKE Smothered Cabbage

Heat the oil in a skillet or large saucepan over medium heat. Add the shallots and sauté for a couple of minutes until softened.

Add the cabbage and a fourth of the bacon and cook for a minute.

Mix in the garlic salt (and any add-ins like ginger and creole seasoning) and stock, cover, and simmer for 12 minutes (to have cabbage with a little bite) to 18–20 minutes.

Uncover and adjust seasonings as needed. Then switch off the heat and top with the remaining bacon.
