INGREDIENT NOTES

Chicken – We’re using cooked leftover Rotisserie chicken. But it can be leftover chicken breasts or thigh meat too #soeasy Veggies – use cooked drained corn and black beans. These can be leftover or store bought. Egg roll wrappers – use egg roll wrappers, not wonton wrappers.

TIPS FOR SUCCESS

Don’t overfill the egg rolls otherwise they won’t close properly.   Make sure to seal them properly and cook with the seam side down.

DELICIOUS VARIATIONS

Make them spicy: add in some cayenne pepper or crushed red pepper flakes to get a little heat.  Change up the meat: swap the chicken for beef, turkey or pork.

BUDGET FRIENDLY TIPS

Use leftover chicken – use any leftover chicken you have to hand. Freeze leftover chicken – Put all leftover chicken into a freezer bag and keep adding to it until you have enough to make this.
