Ingredient Notes and Variations
Here’s what usually goes into this recipe, plus a few ideas of how I like to change it depending on what’s in the fridge/freezer:
- Milk: For the best and most creamy results, I use whole milk. You can use a lower fat milk or dairy substitute like almond milk or coconut milk, but this will result in a less creamy dessert.
- Heavy cream: You can use half and half too, but it will be less creamy.
- Confectioners sugar: You can add more or less to your taste or use a sugar substitute like swerve in a 1:1 ratio. You can swap in honey, agave, chopped mejool dates, or maple syrup to keep it lighter without being sugar-free.
- Strawberries: Make sure to trim and quarter fresh berries. You can use ones that are about to pass their prime. Strawberry jam is my favourite shortcut because it’s cheap, accessible but will increase the sugar content.
- Cream cheese: This is one of the key ingredients. You need plain, un-flavored full fat cream cheese. You can use a lighter cream cheese, though the ice cream won’t be as rich.
- Vanilla extract: Use more or less to suit your taste. I sometimes use vanilla bean paste.
- Vanilla biscuit: So many options here. You can use vanilla biscuits, graham crackers, shortbread or digestive biscuits for topping and mixing in. It is fun to add in some freeze dried strawberries too. Mini chocolate chips make a great addition. Use gluten-free biscuits or skip them entirely for a gluten free version.

Bintu’s Recipe Tips
I’ve made this enough times to know that these tips and tricks make a big difference:
- Soften the cheese: Make sure your cream cheese is softened for a smooth ice cream. Leave it on the counter for about 30 minutes before using.
- Freeze for long enough: You need to allow the mixture to freeze for a complete 24 hours. It must be fully frozen in order to process correctly.
- Use the respin function: If the ice cream isn’t creamy enough, just use the re-spin function. Add a splash of milk or cream before you respin.
- Add flavor: Adding orange zest or lemon zest to the ice cream base gives it a delicious citrus boost.
- How to avoid a peak from forming: Try freezing without the lid to prevent a peak from forming on top of the frozen base. However, if your freezer is jam-packed like mine, this is not always an option. I tend to use the lid and just shave off the peak to level the top before processing.

Prep and Storage
- Storage: Keep in an airtight container inside the freezer for several weeks, up to one month.
- Prep ahead: Make sure to prepare your ice cream base and allow it to freeze for 24 hours before adding it to the machine. If you love ice cream as we do, I highly recommend preparing several recipes at once so there is always a frozen pint on hand and ready to process. Re-spin with 1–2 tablespoons milk before serving.

FAQs
Can I skip the mix-ins?
You totally can, just make a creamy strawberry ice cream instead.
Do I really have to wait 24 hours for Ninja Creami?
As difficult as it is, you do have to wait 24 hours for Ninja Creami ice cream bases to freeze. To get the proper texture, it is critical that the ice cream base be a frozen solid. This ensures that smaller ice crystals form, which provides that super creamy texture we all love.
What if I don’t have a Ninja CREAMi?
If you don’t have a Ninja CREAMi, you can make this ice cream recipe with a food processor or blender. Blend the base until creamy, freeze until solid, then let it soften slightly before serving. Do note that the finished ice cream will have a less creamy texture.
