Ingredient Notes

  • Chicken – I used skinless boneless chicken breast but you can use skin-on breasts.
  • Veggies – a selection of red onion and spinach make up the veggies in this stew.
  • Chicken stock – feel free to use homemade or store-bought stock and you can substitute in some veggie stock instead.
  • Seasonings – This has a selection of flavorings like onion powder, garlic powder, rosemary, and thyme. Feel free to omit any you don’t like and add a little more of those you do like.
  • Tortellini – I used fresh tortellini for this, you can use dried but the cooking time will be a little different.
  • Tomato sauce – use your favourite sauce.
  • Heavy cream – this adds extra creaminess to this soup. You can use half and half instead.

How To Make Instant Pot Tortellini Soup

  1. Set the Instant Pot on the Sauté setting. Add the olive oil and the onion and cook until translucent. Add the chicken breast, stock, spices, and tomato sauce.
  2. Close the lid and valve and set on high pressure for 6 minutes. 
  3. Perform a quick pressure release (QPR) to manually release steam, open the lid, and with the help of 2 forks, shred the chicken breast. 
  4. Set to sauté again. Add the tortellini and cook for 5 minutes. Turn off.
  5. Add the spinach and heavy cream and stir to incorporate, wait for 3 more minutes before serving so the spinach wilts a bit.

Budget Friendly Tips

  • Use chicken thighs – Use boneless skinless chicken thighs for an even more affordable option.
  • Use the greens you have – use the greens you already have on hand, kale for example works just as well as spinach.
  • Bulk it with veggies – You could add in a few more veggies to the Instant Pot Creamy Tortellini Soup and a little more broth to bulk it out.

Prep Ahead And Store

  • Prep Ahead – To prep the soup in advance, follow the instructions but do not add the tortellini. Then store it and when you’re ready to use, simply add the tortellini and give it a boil. That way, the tortellini will retain its perfect texture.
  • Store – In an airtight container in the fridge for up to 5 days.
  • Freeze – You can freeze this after it’s cooked and cooled, then store in the freezer for up to 3 months.

  • This recipe stores for 5 days so you can eat it on the day you cook it plus 5 more days.

Ingredients

  • 2 tablespoons olive oil
  • ½ red onion chopped
  • 1 chicken breast boneless and skinless
  • 2 ½ cups (591ml) chicken stock
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • 1 cup (225ml) tomato sauce
  • 3 cups (325g) fresh tortellini
  • 1 ½ cup (45g) baby spinach
  • ¾ cup (177ml) heavy cream

Instructions

  • Set the Instant Pot to the sauté setting. Add the olive oil and the onion and cook until translucent. Add the chicken breast, stock, spices, and tomato sauce.
  • Close the lid and turn the valve to the sealing position. Set to manual pressure / high pressure for 6 minutes.
  • When done, perform a quick pressure release (QPR) to manually release steam. Then open the lid and, with the help of 2 forks, shred the chicken breast.
