When I roast a whole chicken, I always plan to use the leftovers in various ways, but chicken wraps with bacon are one of my favorites. And since it is one of the most family friendly recipes – I make it all the time.

Chicken wraps are the perfect way to use up leftovers. Wrap leftover chicken from dinner, leftover bacon from breakfast, and toss in a few salad ingredients for a quick and easy lunch or light supper.

- Chicken – While this recipe calls for cubed chicken, shredded chicken works well too. You can also use leftover turkey. Do use store bought chicken to save time if you prefer.
- Bacon – you need cooked bacon for this recipe.
- Wraps – a great idea is to buy flavored sandwich wraps at the store, but you can also use a regular tortilla (flour tortillas or corn tortillas) or serve this as a lettuce wrap.
- Tomatoes – Don’t have full-sized tomatoes? Cherry tomatoes sliced in half or quartered work well too. Dont like sliced then use diced tomatoes.
- Ranch – Ranch dressing is so yummy, and I use hidden valley version, but feel free to substitute your favorite salad dressing.

- Load With veggies – Some of our favorite veggies to add to this wrap include spinach, sliced red onion, green onions, peeled and sliced cucumbers, sprouts, and avocado.
- Make It Spicy – Add a bit of sliced jalapeno.
- Use a flavored tortilla – Wraps come in a variety of flavors like plain, spinach, and sundried tomato.
- Mexican style – Season the chicken with taco seasoning and add jalapeno ranch. Corn and black beans would make a great addition too.
- Italian style – Season the chicken with Italian seasoning and swap the ranch dressing for a creamy Italian dressing.
- Greek style – Season the chicken with Mediterranean seasoning and swap the ranch dressing for a Greek dressing. Add shredded lettuce, feta cheese, and black olives

- Stretch it Farther – This recipe uses ½ cup of chicken per wrap and makes 4 wraps. Stretch it further and make 6-8 wraps by adding less chicken and increasing the amount of veggies.
- Use Leftovers – Ideally, for a budget-friendly meal, you will be using leftover chicken. You can also purchase a rotisserie chicken from a grocery store.
- Use What You Have – If you don’t have sandwich wraps, use tortillas. This can also be served on a roll or over lettuce as a salad. The key to staying on budget is using what you have on hand and cutting down on food waste.
- Watch for Discounted Rotisserie Chickens – My local grocery store knocks a few dollars off their day-old rotisserie chickens. Ask at the deli for their discount schedule. This is a great way to save money by stocking up on shredded chicken meat for a variety of recipes.
Make Ahead and Storage
You can make chicken wraps ahead and store till needed.
Prep Ahead – Make these wraps in advance and enjoy for lunch or dinner. To prevent the wrap from becoming soggy we recommend that you roll loosely and wait until just before serving to add the ranch dressing.
Store – Wrap leftover sandwiches in plastic wrap and store in the fridge. Eat within four days.
FAQs
After assembling the sandwich, place it onto a hot grill or onto a grill pan. Cook for 2-3 minutes and then flip and cook on the other side. Cut in half and serve.
Using leftover cooked frozen chicken would be an economical way to use what you have on hand. Thaw the cooked chicken in the fridge overnight and assemble the sandwiches as instructed.

Chicken Bacon Ranch Wraps
Ingredients
- 2 cups (280g) leftover cooked chicken cubed (I prefer skinless chicken thighs for this, but you can use skinless chicken breast)
- 2 large tomatoes sliced
- 2 cups (150g) shredded lettuce
- 4 tortillas or sandwich wraps
- 8 slices cooked bacon
- 5 tablespoons Ranch dressing
