Ingredient Notes
- Bread – Use your favorite baguette or ciabatta. I love toasting them for the best result toast. But you can serve it without toasting if you don’t have enough time.
- Tomatoes – These are the star of the show, so use the best tomatoes you can. If large, then you need to chop them small. I love making this with cherry or grape tomatoes.
- Basil – Fresh basil is best, but you can use dried basil if easier.
- Olive oil – Use the best olive oil that you can.
- Cream cheese – Start with full-fat plain cream cheese, but change it up to flavored cream cheese if you like.
- Flavorings – Salt, black pepper, and dried herbs complete this.

- Preheat the oven to 350 degrees F / 180 degrees C / gas mark 4. Slice the baguette or ciabatta into pieces about ½ to 1 inch thick. Place the slices on a baking sheet and brush each with olive oil. Place them in the preheated oven for 5-7 minutes until the bread is golden and crispy.
- While the bread is in the oven, cut the tomatoes into small cubes. Also, finely chop the basil. In a bowl, combine tomatoes, basil, dried herbs, salt, and pepper.
- Remove the bread from the oven and let it cool slightly.
- Spread a thin layer of cream cheese on each toasted slice of bread.
- Top with the tomato and basil mixture.
- Serve the bruschetta immediately to ensure the bread remains crispy.
Recipe Tips And Variations
- Skip the cream cheese – if you prefer just a plain old bruschetta, then simply skip the cream cheese.
- Vary the cream cheese – while I used plain cream cheese, feel free to vary this. For example, you can use some cheese mixed in with garlic and herbs. You can even use mascarpone cheese instead.
- Vary the bread – I have served this with crostini and gluten free oat cakes too.
- Assemble before serving – To keep the bread as crispy as possible assemble this just before serving.
Prep and Storage
- Make ahead – Make the tomato mixture a day ahead of time and refrigerate. You can also toast the bread a day ahead of time.
