FAQs
I like to peel my sweet potatoes, but you don’t have to. Sweet potato skins are perfectly safe to eat, both raw and cooked. If you prefer, leave the skins on but be sure to thoroughly wash the potatoes before slicing and cooking.
While not required, soaking potatoes in ice water before frying removes excess starch and helps you get super crispy fried potatoes.
If you wish to perform this optional step, slice the potatoes and soak them in a bowl of ice water for 20-30 minutes. Drain and dry well with a towel before proceeding with the recipe.

John
Not one chip resembled a sweet potato chip I’ve seen ever in my life. Soggy, burned, had to try to save every chip individually almost. Maybe I missed something You didn’t suggest turning any batches, or spraying both sides or salting both sides. Weird recipe. Perhaps I should avoid recipes I find on my iphone!
